How do I retrieve old text messages from my cell phones..

If you have Messages turned on in iCloud then any deleted texts are gone for ever.
Otherwise you would need to restore a full archived backup that contained the messages. Not many people keep a series of archived copies of phone backups on their computers.
Obviously you would lose everything after the backup so you would need to restore the latest backup to get back to normal.
