apple TV on an AV receiver , connected to a video-projector
i'd like to manage the apple TV from my ipad pro when my projection screen is folded (for music)
is there any app or functionality that could do the job?

Yes - from the iPad Control Centre.
First, enable the Apple TV Remote option for the Control Centre in iPad Settings:
Settings > Control Centre > Access Within Apps - set to ON
Next, if AppleTV Remote is not already listed in Included Controls, tap the corresponding green “+” in the list of More Controls.
Now exit the Control Centre settings.
Swipe down from the top-right corner of the screen to expose the Control Centre - then tap the AppleTV Remote icon to expose a complete set of AppleTV controls:
