How can I recreate a new iCloud and delete an old iCloud???

Don't quite understand your question.

Do you have multiple Apple ID?

Have you forgotten your Apple ID?, check your Apple ID via your email box, see this Apple article: If you forgot your Apple ID

Note that you cannot delete jus an iCloud account. You can delete the AppleID used with that iCloud (link was provided above) but that deletes everything associated with that AppleID. You would have to repurchase all apps in order to be able to update them. You will also lose your current FaceTime account, and iMessage account and will have to make new ones.
