I added my Child to as a Family Sharing Member but I typed her name wrong.
How can I edit her name? Or delete/remove her membership and add her again with the correct spelling?

Typed wrong where? During the creation of the Apple ID for her? Or somewhere else?
If the name is wrong in her Apple ID, you can go to https://appleid.apple.com and log in with her account and edit her name there.
You can also edit it on a device that is logged in to the Apple ID, by going into Settings->Account(top of Settings)->Name, Phone Numbers, Email->Name. Tap on the name to edit it.
