".I'm guessing Pages gets updated with the OS updates? "
Not necessarily. True in this case, though as Monterey requires the current version of Pages—11.2
"Header" is a short name for "Running Header"—a line of type that appears in the same location on several pages. The text may be different for verso and recto pages, but will stay the same through the range of a 'chapter' or 'section' of the work.
You can place a header in a Header box on a single page, and prevent it from being displayed on other pages by isolating that page as the only page in its section, then setting the the headers in the following section to not match those in the previous section.
Or you can avoid the header boxes by placing your 'header' text in a text box, then placing that box in front of one of the header boxes.
If you are also placing (different) running headers on succeeding pages, you'll need to do one of the following:
- Set the headers to Not show on the first page of the section
- Add colour fill (of the same colour as the page background) to the text box containing your one-page header.
- Insert a Section Break at the end of the text on the first page, and set the headers in the new section to not match the previous section.
