I use my iPhone 8 Plus with iOS 15.3 with triple tap (back tap) to take a screen shot.
Check your
Settings > Accessibility > Touch > Back Tap >
Double-tap > ?
Triple Tap > ?

Just tested and it's working:
Double-tap > Home
Triple tap > Control Center
Did you tap hard and fast enough?
Did you do the force restart?
Also are AssistiveTouch and Touch Accommodations: both Off?
What did you set for your double & triple back taps?
As mentioned, my triple tap for screenshot is working.

None worked. Maybe my iPhone 8 is "broken"?!?
