What is the adapter that is needed and why is it not included with the watch
what is the adapter that is needed to plug in the phone and how do I get it. It was not included with my new watch.

You can use any USB-C port on a personal computer.
You can the USB-C charger from a recent Macbook Pro, iPhone, or iPad.
If you have an older Apple Watch, you can use the charging puck and power brick.
You can purchase any manufacture's USB-C charger from any retailer, such as Best Buy, Staples, Amazon, etc.... A 20watt or higher charger will enable Apple Watch Series 7 Fast Charging. But any size USB-C charger will do.
You can get a USB-C to USB-A adapter and use any USB-A port or charger (this will not enable Series 7 fast charging as the USB-A standards are limited on how much power they can provide).
