I received a notification that one of my cards had been removed from my apple wallet. I had not requested this and no other details were given and having checked with my card supplier, there are no issues with the card. Why would this suddenly happen without me requesting it?

Looks like a scam.
You can check, take a look in Wallet.
Thanks for the reply and I have just checked and card shows as a previous card so think it was a genuine message but no idea why it has been removed!
