I don't want to migrate all my files from old computer to my iMac, can I just download to a flash card or stick and load to my iMac?
I would like to just move a couple of files from hp desktop to my new iMac, can I use a memory stick?

Sure. There are several other (faster!) options
use target disk mode:
Transfer files between two Mac computers using target disk mode - Apple Support
Connect them both to the network, turn on sharing, and transfer files that way.
