Yes. Siri will show all entries in calendar not just appointments. This includes any holidays that are part of the calendar.
The default Apple calendar has many holidays from different cultures that are observed in the U.S. as well.
Another thing I noticed curiously was when I asked her to make an appointment for example with Dr. Frank Jones. She makes an appointment for Dr. Frank even though I have specifically said Dr. Jones. Maybe I have him in my contacts incorrectly.
Check your Contacts for the name yes, and make sure you have given him the Doctor Prefix. I find Siri ignores the doctor part if its not set as prefix.
When editing the contact click on the [+] button at the bottom to add additional fields. Then go to More fields and select "Prefix".

I tried your suggestions however I still could not find the appointment for my doctor.
Scratch that.
After a few tests, I find that Siri is very specific about how you have to ask for appointments.
Also, if the appointment does not have the person you ask for as an invitee, Siri won't find it unless you are very specific.
Also, it seems Siri makes a distinction between Doctor and Dr.
I can ask, when is my appointment with Dr. JOHN. And she replies she can't find one.
I can ask do I have an appointment with Dr. JOHN. And she replies you do not have an appointment with Dr. Dr. John.
If I ask her to list my appointments, she lists all of the holidays that are upcoming.
This is happening both on my iPhone 8 and my iMac. And before you ask yes of course they're both up-to-date.
