My emails are stacking on top of each other on my iPad Pro

It's a little difficult to completely understand what's happening, maybe you can explain a little more about exactly what's happening.

You might also try restarting your iPad to see if that helps:

Also, make sure you have the latest update installed on your iPad Pro. As per this writing, the current version of iPadOS is 15.3.1:
