Is there any way to control/add a Media smart AC with Siri and Home app?
The AC has its own iOS app but is otherwise Alexa and Google. Perhaps using Shortcuts in some way to control the app via Siri?

I have this issue too with my A.C. It does have an iOS app but control of it requires opening the app and using the controls in app. Unfortunately I do not think there is a way. The device needs to be Home enabled.
Maybe someone else will pint out a workaround. I haven't been able to find a way.
Side note, Thread enabled devices will, in theory, be universal to all smart home control platforms.
