Thanks for reaching out to us in Apple Support Communities about how to change the clock from analog to digital. We're happy to help by looking into this more! 

The main clock at the top left of the iPad is in digital format, the only analog clock is the clock widget. Like the one shown here:

The only built in clock widget is analog, however you can see if there some third-party apps that provide a different clock. You can see more about how this is done in the section labeled "Use widgets from other apps"
