I’m trying to change Fahrenheit to Celsius on Apple Watch 7

If you have the Weather app set to Mirror your iPhone, you will need to change the setting on the phone. Go to the Weather app, tap on the 3 lines in the lower right corner. That will open the list of cities. Tap on the 3 dots in the upper right corner, you can set it there.
