Ready for your new iPhone

I was using an iPhone 6S plus 32gb, iOS updated to 15.3.1 with Apple ID plus iCloud signed in and functioning. I am trying to switch to a new phone which is an older iPhone 6 with only 16gb storage and is only up to iOS 12.5.5. In settings it says ready for new iPhone and data is ready to be moved. I have the SIM card in the new phone, signed into Apple ID, and did iCloud backup on both. What is the next step to move the data because the new phone is missing a lot of what I had on my old phone and i don’t want to delete my old phone until I’m sure I’ve transferred everything properly and it is in fact safe to remove my old phone now and all my files data and pics etc are safe. Thank you

If you really want the most complete transfer of data and setting, that would be via performing a backup to a computer, then completely "restoring" that backup to your new iPhone. That can be done at any time, and will completely wipe the contents on the "newer" device.

And the restore can be done even if you've previously set it up. Other methods (like Quick Start through Bluetooth) can only be done when the newer device is powering up from factory settings.
