can someone assist me with deleting photos and videos on my iPhone

When you delete a photo it isn’t removed immediately; it is moved to a Recently Deleted folder. Have you looked there?
Also, when you delete a photo from an album it is removed from the album, but not deleted from the Photos app. To remove a photo completely you must remove it from the Library view.
