Crazy Questions about Apple Watch and Insta360 Camera

First off, I do not have an iPhone and am not getting one. :) haha
So I have an Insta360 Camera. They have a GPS smart remote to track speed, elevation, etc. but it is a horrible product that does not pair well and has trouble updating using android and the battery dies in like an hour if out in the cold...I actually am using this camera mostly for snowboarding. The Apple watch apparently works really well to control the camera as well as track GPS data since the watch has GPS tech in it (I think...).
I read online that you can technically use an Apple Watch without pairing to any iPhone but the functionality would be very limited (makes sense). Could I technically get an older Apple Watch (say the 3 or 4), activate via my WIFI, download the insta360 app on the watch and just connect to my camera only? Does the watch need a mobile network for gps to work?
If anyone uses their apple watch with an Insta360 One X2 camera, does the battery of your watch last?
