Adjust watch screen wake time

Several online sources give instructions for changing the screen wake time by going under settings->general->wake.

I don't see that under general settings. I have a new series 7 and would like to adjust the wake time to 70 seconds.

set up sleep Why do I have to set a specific wake up time in order to use Sleep app? That is absurd. I tell my brain what time I want to get up just before I go to sleep and I wake up at that time. NO NEED for Apple Watch to wake me up! I would like to use other aspects of the Sleep app so why can't I? I have version 9.0 on Apple watch Series 5.
