My macbook auto updated the OS to Monterey 12.2.1 last night and now my chrome's browsing experience is messed up, a lot of websites with white background just displays in black where I can't properly see the text or content, even this apple community form can't be displayed properly (shown in screenshot below). How can I fix this?

A lot of times just boot to Safe Mode followed by normal boot resolves problems.

We have this issue as well.
Our work around was to turn off dark mode in MacOS and then choose the dark theme within Chrome.
Not sure if the issue lies within Chrome or MacOS, but it came up after updating to 12.2.1
