I'm currently using 2 Firewire and a dozen of USB connected devices with my old 27" iMac and High Sierra.
I'm planning to buy a new iMac (M1), but I wonder if it is possible to connect my devices and run Monterey without severe issues.
I've found some adapters (like the one for Firewire-Thunderbolt). Do I need more?

For FireWire you need 2 adapters. The FireWire to Thunderbolt 2 adapter you mentioned and a Thunderbolt 2 to USB-C adapter.
For USB-A devices you need some USB-A to USB-C adapters and/or a USB hub.
If any of those FW devices expect power it won't be delivered over that TB3 to TB2 cable, and they will need a separate power source.
