On my iPhone SE when I go to require password the only option I have before it's required is immediately. What can I do. (no work email)

If you have Face ID enabled and have Apple Pay enabled in the Wallet app, then it must be set to Immediately.

There is another setting that you may wish to explore. Open Settings ➡️ Display & Brightness ➡️ Auto-Lock. This is the setting that controls how long your screen stays on before locking itself.

Can I set it to just require password for contacts, emails, and apple wallet?

Unfortunately, You cannot set up a separate password requirement for the Contacts, Mail and Wallet apps.
