Can I change the os of an ipad? I was trying to turn my old ipad mini 4 into somewhat of a desktop. Is there any way I can change the os to something like linux or darwin even

No, you cannot install a different OS. Your iPad hardware/system architecture is explicitly designed for iOS/iPadOS.
