I am unable to update Safari on my 10 year old Mac. How do I overcome this?

You use a different browser.
Safari versions are inherently tied to the OS version. If you can't update to the latest OS version then you can't get the latest Safari version. At that point your option is to use a different browser such as Firefox or Chrome, which may support older OS versions.
