How do I screen mirror iPhone to multiple Apple TVs?
Or screen mirror to 1 Apple TV and airplay audio-only to another device (e.g. amplifier)?

Welcome to the Apple Support Communities.
Unfortunately, you cannot AirPlay to multiple Apple TVs, but you can give Apple feedback: Product Feedback - Apple.
Or screen mirror to 1 Apple TV and airplay audio-only to another device (e.g. amplifier)?
If you can connect the amplifier to the Apple TV, you could do that.
