Is someone, like my partner, able to access my iPhone 13 remotely without my knowledge or permission? Could they look at my messages, call logs and that sort of thing? Are they able to log into my apple account on their phone and see anything?

If they know your Apple ID and password, they can log into your Apple ID on their device and see your messages, data synced to iCloud, and other information.
You might want to consider changing your password and making sure it is a strong one. You can also add 2 Factor Authentication to your account for more security. If the attempts continue, you might want to consider a name change.

Make sure you turn of Find My Phone before signing out of the old ID. Once signed out and Find My Phone is off, then sign in with the new ID, then turn Find My Phone back on.

You are welcome. When they sign back in using their Apple ID, they would recover most of their data or they could make a backup and restore the backup when they signed in with their Apple ID.
The only thing that could take hours to switch over is syncing the data stored in iCloud.
Thanks Eric, I didn’t actually realise this was possible. Surely that would mean they would loose all their stuff on their phone or it would take hours to switch over right?
