I removed someone from the conversation, then added the same person back. Can they see the messages that were sent in between that time?

No, when people leave* an iMessage conversation, and then come back, anything said while they weren’t in the conversation won’t show up on their phone.
If the conversation was not deleted from their iPhone when they left, they’ll only see messages sent before they left and after they came back.
