I don’t have the device or the number that I want to deregister, but it’s still on my name phone, numbers, and emails, in settings

If you don't have the phone number, why do you need to deregister iMessage?
If it still shows up in settings, just "un-check" it from Settings > Messages > Send & Receive.
I no longer have the device with the number I’m trying to deregister. so that does not help.

You need to read the article. See the section titled "Deregister iMessage online".

I’m trying to get it off my account so I ca disassociate from the number all together
Can you deselect it from Settings > Messages > Send & Receive?
