Can’t change date and time on my iPhone 11 it’s grayed out

Probably you have Screen Time turned on or you have a management profile in Settings, General, VPN & Device Management.
In any case it can cause real problems turning off automatic time. Try changing your region instead.
If you have screen time enabled you can’t change the time from automatic, because that would allow bypassing screen time restrictions.
