If the old phone died due to a weak, aging battery, have the battery replaced and see if the info transfer then works:

You say the old phone has died?

Quick start will not work if that is true.

You should have been backing up regularly, maybe iCloud backup was working if you didn't turn it off. Restore the new phone from your backup?
