I am trying to log my Apple ID out of an iPhone but the sign out tab is grey and it won’t let me sign out

Have you checked Settings/Screen Time for any restrictions?

Check your iTunes, payment methods, find my iPhone, and other apps/subscriptions to make sure that they don't require an apple id. If you really need to, factory reset your iphone
