M1 Dual boot for 2 macOS partitions possible?

I'd like to know if a dual-boot setup can be configured for macOS such that I have 2 macOS partitions completely independent of one another. Upon system startup, I want to be able to select either one to boot from.

Is this possible?

Installing a different OS on a current dual-boot iMac I currently have an older iMac (2011) that can dual-boot either Lion or El Capitan. I now want to delete Lion and install the High Sierra OS in its place (but leave El Capitan alone, so that I can still boot-up in it if I need to). When I start the upgrade, will it ask me which volume to install High Sierra to? And if I install it to a different volume (other than the one running El Capitan) will it leave El Capitan alone, allowing me to then have a dual boot iMac that can run either El Capitan or High Sierra? I just don't want the upgrade to erase El Capitan, and I forget how these things work. I'm hoping it's as easy as this: Wiping the volume that Lion is currently on Having the updater ask me on which volume to put High Sierra Select the volume that Lion used to be on Ending up with High Sierra one on volume and El Capitan left untouched on its current volume Is it as easy as that? Am I missing anything?

How to Dual Boot two versions of Mac OS In descriptions of Dual Booting one is given a picture of a choice of destination between two Volumes, one, the original Mac HD and the other, a constructed volume defined by addition by Disk Utility. This is conceptually straight forward. However what is never mentioned is how one gets access to a clean operating system version that is not encumbered with a predestination to be an upgrade to the resident os already on the Mac HD original volume. I am running an i7 Mac Mini with Mojave 10.14.6 and I want to dual boot up in the second volume a clean version of Catalina or possibly Big Sur. Finding one or the other of those installer packages not predestined to be an upgrade to Mojave has eluded me. It appears impossible but I am hoping someone knows differently.
