If I have a damaged apple watch and accidentally removed the apple watch app from my phone, how can I recover the app and all its information?

All the data is kept on the phone not the watch so if you unpair it through your watch app on the phone a backup of all your data is made and uploaded to icloud.

When your watch is mended or replaced you can restore this backup to the new/repaired watch.
