Disconnect the iPhone from your iMac. Shut Down and Restart your iMac.
Then, Try and Force Restart your iPhone EXACTLY as shown below and see whether that resolves the issue:
Now connect the iPhone back to your iMac and check the Finder again.

I'm doing exactly what you describe: connect iPhone to iMac with a USB cable. The iPhone icon appears in the sidebar. I click on it. The area to the right of the icon should display the iPhone's data and sync options – but it doesn't. That area is BLANK.
Whoa! Axel… problem solved.
The magic trick was simple. All it took, to bring back the normal data in the iPhone's Finder window was, first, to connect the iPhone with a USB cable… and then, to RESTART THE COMPUTER.

Be sure to connect your iPhone 11 to your Mac with a cable. Once you see the iPhone 11 in your finder, then click on it. The iPhone information should be populated to the right window.
