Warranty expiration
What options are available for extending warranty coverage on my ipad? (i.e., Applecare, etc.)

If you're talking about Apple Care Plus Protection Plan extension, see this support article:--> Extend your AppleCare+ coverage - Apple Support
If you do not have Apple Care plus (just standard Apple Care) you can do nothing, unless you adhere to an Apple Care Plus plan within 60 days from the date of purchase.
