I sent my contact card to someone a while back, and I recently moved. I want to update my home address on my contact card but I don’t want this person to see my new address. If I update my contact card, will they be able to see my new address somehow? Thanks!!

Thanks for posting in Apple Support Communities. It sounds like you previously used AirDrop to send your contact card to someone. Right? In that case, AirDrop sends the contact as it appears in your iPhone at that time but does not sync any changes that you or they make to the contact.
Only devices where you are signed in on and have enabled iCloud Contacts on would sync those changes - Set up and use iCloud Contacts.
