If you'd like to set your iPhone in Grayscale mode, you can do that by going to Settings > Accessibility > Display & Text Size > Color Filters, and selecting "Grayscale".

To leave Grayscale, go Settings > Accessibility > Display & Text Size > Color Filters, and choose one of the other options or turn off Color Filters.
