How do I wipe all my data from my MacOS Monterey 12.2.1?

I have bought a new iPad and my local Apple store transferred my data to it, but couldn’t take my old MacBook Air Mac OS Monterey Version 12.2.1 as a trade in. I want to wipe all the data on this old Mac and can then send it to Apple for re-cycling. I have 200 GB of iCloud storage, so am confident all data has been saved.
