Is Mac Studio 8TB storage option a single or multiple drives?
Apple has not identified if the n8TB option has one 8 TB SSD or two, 4 TB SSD's.
I do note the the 8 TB upgraded for 2019 Mac Pro is two 4 TB drives so I would expect the same for the 8 TB Studion.

What difference does it make?
if either fails it takes out all.
These modules appear to be 'just the SSD data chips' and proprietary -- stuff on the mainboard acts as controller. You can't just plug another commercial component into the other slot. At this writing, there are no aftermarket devices.
Grant, the data file structure that I need to support is a single 7-8TB filesystem rather than two separate 3-4TB filesystems. Whether 1 drive or 2 would determines whether or not the Mac Studio is a good fit or not. It is unfortunate that the Mac Studio specs does not provide this level of detail for potential buyers.
The Studio and the Mac Pro before it create a logical drive out of one or several modules, and do not allow you to access the details.
The User does NOT have access to the individual modules -- as far as system calls are concerned, it is ONE Volume, and as far as physical I/O is concerned, that is made so complex as the be essentially impossible..
