Why doesn't Apple Card support linking to Qucik Books?

This is primarily a user-to-user support forum; other Apple users like you. We don't have access to unpublished information about why Apple doesn't do things.

The only thing I can recommend is what I do -- use a different credit card that does what you need it to do.
