Backup
Why can’t I backup with cellular data instead of WiFi? I don’t have access to WiFi. And I don’t trust free WiFi in town.

That feature is only available if you have an iPhone that supports 5G and your carrier supports it. Backing up on cellular would take a tremendous amount of time and data, and changes in cellular data signal strength could corrupt your backup.
