iPhone and iPad linked with iTunes

Hello

I have a new iPhone and I gave my older iPhone to my mum which is used under my iTunes account. Her iPad is also linked with the same iTunes account.

if she gives her iPad to someone and is still logged into her iTunes account can that person access mine and her messages? Or just hers?

I have changed my password and removed her from my account now just in case will that automatically log the iPad out of iTunes and therefore unable to see anything if so?
