De-link iPhone from iCloud

Question

How to disconnect my iPhone from iCloud and delete the phone's data currently stored in iCloud?

I want to retain the iPhone's data (e.g., contacts) undisturbed.

How would the iPhone's functioning be changed if it were delinked from iCloud?

You would need to Sign out of iCloud in Settings->Account(top of settings)->Sign Out(bottom of the screen).
When signing out it will ask you if you wish to retain the iCloud data on the device, just answer yes.
The iPhone itself will continue to work as it has. It will just no longer backup to or store anything in iCloud. So if anything goes wrong with the iPhone and you can no longer access it, there would be no way to recover the data unless you are backing up to a computer regularly. Certain features that require being logged in to iCloud to work would no longer work, such Continuity features like Handoff, Continuity Camera and others, iCloud Keychain, iCloud Photos, iCloud Music Library etc..
