Jack, I'm not sure why it didn't work for me, but I found this method that the did the trick.
Drop down at the bottom. Select 'Make Service Inactive' and/or 'Make Service Active' based on its current condition.
Thanks for your quick response and suggestion.

Welcome to the Apple Support Communities.
Go to System Preferences > Network, select Ethernet from the left sidebar, and in the "Configure IPv4" dropdown menu, select "Off". Then, click Apply.

Thank you, but I see you have your Cable Unplugged. If I leave my cable in, I can set the iPv4 as Off, but the connection still remains even after clicking Apply. To test this, I turned off my WiFi and I was still able to browse the internet. Very strange. I was hoping for a Turn Off setting like the one for WiFi.

I know I have my cable unplugged, but it should still disable Ethernet.
