Im musician and Im trying to change the MacOs Monterrey to Big Sur or another compatible with MacBook Air M1 2020, because some applications to play music are no functional with the actual operative system. When I try to install Big Sur a screen say that I can't open this in my laptop. Could you help me?

You cannot do what you want. Macs cannot run from an OS earlier than the one they were released with. You need to get updated applications.
Hello, it says you cannot install Big Sur on your Mac since you have a new version installed. wipe the MacBook Air's hard drive then restart it and hold Command + Shift + Option + R to boot to the Big Sur recovery screen
If your Mac came with Big Sur then you could downgrade but if not then what Yer_Man stated is the reason you cannot.
