How do I can erase the data from my icloud storage account of a person who is no longer part my family group?

If a member of a Family Sharing group leaves the group they also leave your sharing space. They resume their own iCloud+ account (or the free 5GB plan) and all content remains theirs. The content was never accessible by you and remains inaccessible.
