How does apple sharing work?
What is apple sharing? Who can see what? Even if I am not the owner of the account?

No such thing as "Apple Sharing". There is Family Sharing and there is Home Sharing. They are 2 different things and work very differently. Please specify what exactly you are referring to.
Do note, neither allows any one to see your photos, contacts, messages or other private content unless you specifically share it..
