Where trying to back up my iPhone 11 with iOS15 to my Mac with Big Sur, I get a message saying I need to update software, but no indication of what software. The OS? Is Monterey required in order to back up a iOS15 phone?

I am still running 10.11.6 on my ancient MBP and I can sync and backup my iOS devices running iOS 15.

No. The update is just a small "iTunes" / Finder / Music app update to connect to the iPhone. It will not update your macOS version.
Just accept the update.
I updated my iMac yesterday -> macOS Catalina security update 2022-003 10.15.7 & Safari 15.4
I got that screen too, Apple article in Demo response..
After the update is done, this message will appear ⤵️
