That is correct, they only currently sell a 24” M1 iMac.
They now sell either a 27” or 32” Studio Display, that can be used with many of the later Mac models.

If you really have your heart set on a 27” iMac, check at Apple Refurbished like stedman1 suggest’s.

or look at getting one from another vendor like OWC Mac sales.com.
Apple offers a 27" and 32" Studio Display for the new Mac Studio Macs. However, it would be very expensive. The cheapest 27" model would be $3498.
