Try using "sudo" with the command.
Why not just use the Software Update panel you're showing in the graphic by clicking the "Upgrade Now" button. Has always been a simple process for us ... three clicks and the process runs to finish.
Because we are trying to update 1000 clients and we want to automate the process using a script as we have in the past. We want to be able to control when they’re going to get it. We don’t want too many stragglers not upgrading.
also I was able to do it this way via a script from Big Sur 11.5.1 to Monterey 12.1 no issues.
