If you're signed in to the same Apple ID for iMessage on all three iPhones, you can send and receive iMessages on all three devices. If you're not wanting messages to appear across all three devices, you would want to use a separate Apple ID for each device. If these are devices that belong to different family members, it is recommended that each family member use a separate Apple ID. The section titled "Create an Apple ID on your iPhone, iPad, or iPod touch" walks through creating a new Apple ID directly from an iOS or iPadOS device.
You may also benefit from Family Sharing. This will allow features such as iMessage, FaceTime, and other Apple ID related features to be separate from yours, but you'd be able to manage the ability to share purchases with your family along with subscriptions. If you're wanting to continue using the same Apple ID on all three devices or the iPhones are your personal devices, you can use the same Apple ID for iMessage. This would allow for incoming and outgoing iMessages to appear on each iPhone and give you the opportunity to respond via the desired iPhone.
